  • shun (seasonality), gokan (the five senses), umami layering, tare logic, and plating systems.

  • Technique Training

  • Sushi rice, nimono (simmering), tare (sauce prep), robata (grill), knife handling, plating structure.

  • Front of house Storytelling Support

  • Help your front-of-house team understand the offer, communicate dishes, and connect guest experience to the food’s cultural foundations.
