Brought 1010 Group’s sukiyaki food vision to life in Jakarta — launching to acclaim.

From the start, the brief was ambitious: create a Kansai-style sukiyaki house in Jakarta, built around A5 Wagyu beef and tableside theatre. The challenge was balance — keeping the depth and integrity of Japanese flavour and method while adapting to local tastes, and preparing staff to carry not only the skills but also the cultural story that makes sukiyaki an experience rather than just a dish.

Our work focused on turning that vision into food and service.

  • Shiki’s identity was shaped around Kansai sukiyaki, with ceremony and theatre at the table.
  • The menu blended Wagyu sukiyaki with locally sourced vegetables, rice, and meats.
  • Front-of-house teams were trained to weave Wagyu knowledge and narrative into guest anticipation.
  • Kitchen staff learned the Kansai sukiyaki sequence, dashi layering, and balance of flavour.
  • Omotenashi was carried through details like an amuse-bouche and the rhythm of service.
